Zucchini Slice Recipe: No Oil

Zucchini Slice Recipe (no oil)

I’m not a great cook…but I am a brave one.  I make a  lot of mistakes when I’m cooking because I like designing my own simple recipes.  So what I can cook, I cook well.

This is my no oil version of the Zucchini Slice.

Ingredients

5 Eggs

3/4 cup SR Flour

3 Large zucchini (grated)

1 Onion (grated)

1 Cup Grated Cheese

200-300 grams diced bacon

200 grams cream cheese

Salt and Pepper to taste

Method:

1. Lightly beat eggs

2. Add flour

3. Add remaining ingredients and combine well

4. Pour into a 30cm shallow baking dish and cook in a 170°C oven for 30-40 minutes or until set

Serve with salad and crusty bread for dinner and use the leftovers for school lunches.

    I’ve made the oil version but looking forward to trying this one- it looks really light and fluffy.

    Made this just on Wednesday night for tea 🙂 I don’t use the cream cheese but that sounds yummy! Also to make it even lighter, I use 3 egg whites & 2 whole eggs. Still turns out really yum 🙂

    I love zucchini slice but had taken it off the family menu when I calculated it was worth 13 Points per slice! I will definitely give this version a go (with Jade’s egg white recommendation too). Yay!

      I use low fat cheese and cream cheese too to keep the cals down. And Jade’s idea is great. I’ll give that a go too.

    It looks like lasagna or Italian inspired cousine. The process are easy and the ingredients are easy to find. I The pictures looks really yummy, I will try this as well and I just hope that I can have the same tastes just like this.

    How much approx is 3 large zucchini’s? Saying 3 large is open to a lot of interpretation. Thanks 🙂

      It’s one of those recipes that the zucchini measurement doesn’t have to be exact for it to work out but it’s approximately 3 cups of grated zucchini.

    if you have time it is really nice to cook the bacon and onion first and then add it to the mix. It gives a bigger flavor burst of the bacon. I also don’t use the cream cheese but it sounds interesting 🙂
