Strawberry Magic Mousse Recipe

I’m in a lunchbox rut at the moment. Big time. So I’m revisiting the blog post I did for Coles last year which really is kind of weird. Not the post, although with a title like “The Lunch Box Monster”, it is a bit weird, but what is more weird is that I’m going back to my posts to be inspired. But hey: actually maybe that’s not so weird. I think I’ve just established that I AM weird. HA! Okay, moving along from the weirdness, here’s my recipe for Strawberry Magic Mousse.

Magic Strawberry Mousse

1 punnet strawberries
1 avocado
1 banana
2 tablespoons of lemon juice

1. Blend all ingredients until smooth.
2. Pour into individual containers and allow to set for 30 minutes in the refrigerator. It sets into a yoghurt consistency.
3. Will keep in the fridge for 3 days.

Variation1: Once set, mix the mousse with equal portions of vanilla yoghurt.

Variation 2: Freeze the mousse into healthy ice blocks like Erin did (perfect for Summer).

    What a great idea!! The avo and banana don’t make it go brown? I’m in a lunchbox rut too, so this is just what I needed. Off to find your zucchini slice recipe again 🙂

    I revisit your Coles blog post all the time! Love the coconut bread, why I never think to write down the recipe is beyond me! I also made the morning glory muffins that are in the comments yummy.

      This is the recipe for Morning Glory Muffins

      Morning Glory Muffins

      In a large bowl mix together:
      2c plain flour
      1 1/4c sugar
      2tsp bicarb soda
      2 tsp cinnamon
      1/2 tsp salt

      Stir in:
      2c grated carrot
      1/2c raisins
      1/2c nuts
      1/2c coconut
      1 apple, peeled & grated

      In a jug, beat:
      3 eggs
      1/2c cooking oil
      1/2c milk
      2tsp vanilla

      Stir into flour mixture until just combined. Spoon into muffin tins. Bake 180C for approx 20mins or until golden.

    Hi! Wow, can’t wait to try those recipes out!! I also wrestle with the lunch boxes but I did find a great source of inspiration – our tuckshop!! LOL Not to buy from, to copy!! Our tuckshop ladies are wonderful and they are always bringing out new items which are cheap and easy. It’s been a great way of teaching my kids how easy it is to make at home most things that are made in a shop too! Our favorites are mini-muffins, wraps, frozen orange quarters, jelly and custard in a cup, a cored apple (I rub a little lemon on the inside) and condensed milk bickies… We do get tuckshop occasionally though!!! 😉

    I went past this because strawberries are usually $8 a punnet and bananas are currently $18 a kilo. Then I went shopping this morning and found strawberries for $3 and both bananas and avocados in the ‘for quick sale’ section. Bonus! My girls are going to love it.
