Hi everyone, Amanda from ‘Simple Home Cook’ here to share another recipe with you. This one is from my first cook book and is one of the most popular recipes with everyone who has a copy.
I’ll keep it simple:
- 10 mins to prepare
- One bowl
- Throw it all in and mix
- Bake
- It’s sturdy enough for lunchboxes and won’t break into pieces when the kids throw their school bags around.

Amanda (Simple Home Cook)
10 minute banana bread
Ingredients
- 2 ½ cups self-raising flour
- 1 cup brown sugar
- ¾ cup milk
- ¼ cup vegetable oil
- 1 egg
- 3 very ripe bananas, mashed
- 1 tsp cinnamon
- ½ tsp mixed spice
1. Preheat oven to 160 degrees Celsius (fan forced). Grease & line a loaf in (approx 15cm x 25cm) with baking paper.
2. In a large bowl, combine all ingredients. Beat with an electric mixer until smooth.
3. Pour into loaf tin & bake for 1 hr or until cooked through. ?Check if centre is cooked by inserting skewer/toothpick. ?If it comes out clean, the cake is cooked.
4. Leave to cool in tin for 5 mins then transfer to a wire rack to cool completely.
Thermomix variation
- 370 grams SR Flour
- 3 very ripe bananas
- 180 grams milk
- 180 grams brown sugar
- 45 grams vegetable oil
- 1 egg
- 1 tsp cinnamon
- ½ tsp mixed spice
Place all ingredients into Thermomix bowl. Mix on speed 6 for 20 seconds. Bake in a lined loaf tin for approximately 1 hour in an 160 degrees Celsius oven.
