Nothing says sweet & simple like the cupcake. Here’s my foolproof-extremely-delicious cupcake recipe.
Would you believe me if I told you I don’t even own an electric mixer? I’m serious; IT’S TRUE! It broke years ago and I’ve never bothered to replace it. So I use a fork and a whisk to stir the mixture but it’s probably best to beat it with an electric mixer. However, if you’re lazy like me, the cupcakes work out every time for me {whispering} even if I don’t beat the ingredients well.
Ingredients:
3/4 cup white sugar
125 grams butter
1/2 teaspoon vanilla essence
2 eggs
1/2 cup milk
2 cups self-raising flour
Pinch salt
Method:
1. Cream butter and sugar
2. Add eggs and vanilla and mix
3. Add Milk and mix
4. Add flour and salt and mix
5. Divide into 12 cupcake cases.
6. Cook in a 170 oven for 15 mintues or until slightly golden on top and the cakes spring back to touch.
Strawberry Icing:
1 cup icing sugar
1 tablespoon butter
1 thawed frozen or fresh strawberry (mashed)
Method:
1. Mash strawberry.
2. Beat all ingredients well.
3. Add a little water if needed.
Decorate cupcake as desired.
