I’m always looking for super easy recipes to make with, and for my kids. Lynne contacted me recently to share her Easy Microwave Meringue Recipe. I tried it and it’s easy and delicious. It took only 5 minutes to make to completion! Great with fresh cream and fruit to make mini pavlovas.
Microwave Meringue Recipe
1 egg white (lightly whisked)
300 grams (12 ounces) of icing sugar
Food colouring of your choice (optional)
Method:
1. Lightly whisk the egg white, and then beat in ½ the icing sugar.
2. Add the remaining icing sugar to form a stiff paste.
3. Add colouring (optional) and divide into portions.
4. Break into pieces and roll into balls the size of 10 cent pieces. The meringues rise considerably.
5. Place in paper patty cases and put half of them in the microwave, cook on high for 1 ½ minutes.
6. Do the same for the other half.
Makes approximately 20, based on an 850 w microwave oven.

March 24, 2011 at 8:04 amNope. Just egg white and icing sugar. Dead easy. Because it cooks in the patty cases, it does look a little like a cupcake. Would be super yummy served with cream and fruit.

March 24, 2011 at 8:54 amWe just made these. So easy and they taste exactly like the meringues you buy from the shop! We put a few drops of red and yellow food coloring and they look quite pretty. A bit speckily. They did all stick together – I probably needed to space them further apart, but I would definitely try them again.

March 25, 2011 at 1:36 pmIcing sugar…the powder… that what you mean? You doing need to make up the icing, just use the powder with the egg white. My kids loved them!

March 25, 2011 at 4:37 pmYou can buy pure icing sugar or icing mixture. I used icing mixture in powdered form. I didn’t know there was a difference until I shared this recipe with my mum and she asked the same question!

March 25, 2011 at 8:27 pm@Kelly Be A Fun Mum, Thanks guys. Pure icing sugar is usually used for royal icing like on a wedding cake. It’s harder to work with but essential in some recipes Yeah I have icing mixture in the cupboard going to make some now.
