I’ve been thinking about family food recently and it’s wonderful to get feedback and tips from other parents on my facebook page. This week, I asked about including more vegetables into family food, and a reader shared a vegetable laden recipe for chicken balls. Isn’t that cool? That we can have that community feeling, like neighbours, even though we are scattered all around the world! I adapted the recipe a little and it’s delicious.
Ingredients
500 grams chicken mince
1 grated carrot
1 grated zucchini
1 shallot (or a small diced onion)
1 egg
1 cup bread crumbs
Sweet chili sauce to taste (I used 2 tablespoons)
Salt and Pepper to taste
2 tablespoons olive oil (for frying)
Method
1. Mix all ingredients together in a large bowl (expect oil).
2. Form balls using your hands.
3. Heat oil in a fry pan and brown the chicken balls carefully.
4. Place browned meat balls on a baking paper lined tray and cook in a 180°C oven for about 20 minutes, until cooked through.
5. I served the chicken meatballs with baked chips, vegetages and a microwave basic cheese sauce (you can get the recipe here).

June 15, 2012 at 4:44 pmYesterday morning i was at a loss as to what to make kiddies for dinner, for some reason i randomly thought of ur post and remembered a chicken ball recipe i read. I never hide veggies as luckily kids love most and we love talking about what each veggie does for our bodies.. (they LOVE hearing about broccoli.. haha) I ran out and quickly bought some chicken mince then in the blender threw in potato, sweet potato, carrots, zucchini, parsnip, onion, garlic, few scoops of canned kidney beans, ginger (All raw, quick and easy). When that blended mixed it in with chicken mince, egg and breadcrumbs. Rolled and browned. Put it in casserole dish and in oven. I also made brown rice and lentils together. Then grated cucumber mixed it with natural yogurt. Sooo quick and easy!!! Dished up what looked like simple meal of rice, balls and yogurt. Hidden in it was so much goodness… Kids LOVED it!!!!!!! So thanks for the idea!!

June 22, 2013 at 11:43 amThanks for a lovely easy recipe. Was needing a good healthy child friendly recipe for 2 preschooler grandsons calling around for an overnight stay and found your recipe. I added a couple of tablespoons of freshly grated parmesan as well as used Panko breadcrumbs and they have turned out beautfully. I know the boys will love these.
