I’m on a quest at the moment. I’m looking for easy, like really EASY, recipes so I pop them up my sleeve to use when I need them…which is quite often. This recipe has only 4 main ingredients, is ready in under 15 mintues, and was a hit with my family. I realsie it’s not the lightest of meals, but it’s simple, I know what went into it, and to me, that is a priority.
Ingredients
2 tablespoons Olive Oil
700 grams – 1kg Chicken thigh
300-500 ml cream (I used reduced fat)
2 tablespoons of wholegrain (or dijon) mustard
Vegatables of choice (I used red capcium & asparagus)
Salt & Pepper to taste
Serve with Pasta
How to
1. Heat oil in a fry pan and cook chicken thigh until browned.
2. Add cream and mustard and cook for about 5 minutes.
3. Add vegetables and simmer for a for another (approx) 5 mintues until chicken is cooked through and vegetables are tender.
4. Serve with pasta or rice. Add salt and pepper if desired.
The entire family loved it. Win.

Here is one of my favourites that I picked up from a Coles brochure:
Chicken
Jar of Basil Pesto
Cream
Pasta
1. Cook pasta (I usually do spaghetti).
2. Brown chicken.
3. Add cream and pesto to chicken.
4. Toss pasta with cream/chicken/pesto mixture and eat!
You could always add veges if you want or replace the cream with a lower fat option I suppose, but with 6 kids, sometimes I just care about being able to cook something really quickly and really cheaply.
