I’m on the hunt for lunchbox friendly snacks and I came across this Apricot Ball recipe from fellow Aussie blogger, Caz from The Truth About Mummy. I tried them out and they are easy to make and delicious! (My kids liked them too). I’ve converted this recipe for the Thermomix or you can head over to Caz’s blog for the non-thermomix version.
1 cup of dried apricots
1/2 cup of shredded coconut
1/2 cup of oat bran or rolled oats (blitz finely)
1/4 cup of skim milk powder
2 tablespoons of boiling water
Fine desiccated coconut for coating
Thermomix: Slowly turn to 7 for 6 seconds
Thermomix: Slowly turn to 7 for 10 seconds
With your hands, roll mixture into small balls and drop into a bowl of fine desiccated coconut to coat.
Fabulous for the lunchbox! They freeze well too, so you can make up a double batch and pull them out on a need basis.
