If you’re looking for a dip to serve on New Year’s Eve (or anytime!) here’s a beaut recipe by Amanda from Simple home cook.
This is my all time favourite dip and I have been making it for more than 15 years. It is ridiculously easy and you can even show your children how to make it by themselves. It is perfect at a party or BBQ and goes especially well with alcohol. Anytime is the best time to consume this dip which is why I wanted to share this recipe with you for the new year!

LAYERED DIP
Serves 6
Ingredients
250g cream cheese, softened
300g jar salsa
2 tomatoes
¼ small red onion
1 avocado
1 cup grated cheese
Corn chips, rice crackers or baked pitta bread to serve
Method
1. Finely dice tomatoes, red onion and avocado. Set aside.
2. Using a platter, spread cream cheese all over the base. Top with salsa and spread to cover cream cheese.
3. Top with diced tomatoes, red onion and avocado, ensuring an even spread of ingredients over the whole platter.
4. Sprinkle over grated cheese.
5. Serve with corn chips, rice crackers or baked pitta bread.

however I add a carton of sour cream to the cream cheese to lighten it up
