Rolled Meatloaf with Ham, Cheese & Spinach




I have been making this recipe for many years now and when I released my cookbook back in 2013, this was the most popular recipe. Lots of people said it tastes just like spaghetti and meatballs. It is a great meal to make ahead of time and keep in the fridge until you are ready to cook it. Please take note of the long cooking time – 1hr 15 mins. Don’t leave it too late before you decide to place it in the oven or you might not be eating dinner until 8pm!

Rolled Meatloaf - stuffed with spinach, ham and cheese

Rolled meatloaf with ham, cheese & spinach

Ingredients

1kg lean beef mince
3 cloves garlic, minced
½ Tbspn fresh/dried parsley
2 eggs
¾ cup breadcrumbs
salt & pepper to taste
100g ham
2 cups fresh spinach leaves
2 cups grated cheese
500g bottled pasta sauce
½ cup water

Method

  1. Place a large sheet of aluminium foil on bench.
  1. In a large bowl, combine mince, garlic, parsley, eggs, breadcrumbs, salt & pepper. Mix with hands until well combined.
  1. Tip mince onto foil & shape into a large rectangle, approx 1.5 cm thick.
  1. Spread the ham, cheese & spinach over the rectangle, leaving 2 cm around the edge with no topping.
  1. Taking the long edge of the foil, tightly roll the meatloaf away from you, tucking in cheese & spinach as you go. Pull back the foil as you roll. Seal the ends of the mince so the filling doesn’t leak out.
  1. Wrap the entire loaf in foil & refrigerate until required.

Cooking

  1. Preheat oven to 180o Place the loaf (wrapped in foil) into a large baking dish.
  1. Bake, covered for 1 hr, then open the foil & pour approx. ½ of the pasta sauce over the meatloaf. Add ½ cup water to the bottle of sauce, shake to mix with remaining sauce in bottle. Pour this over meatloaf also. Bake, uncovered for a further 15 mins.

                Google works. She obviously isn’t from the US, and we are about the only ones who do not use the metric system. What you have written is like going to another country and expecting those citizens to speak English. It’s called respect.

    I’m 85 yrs old and and still do a lot of cooking but have never heard of mince before.Is that an English word and why do you use it when using chopped hamburger/?

      We say mince meat/beef here in Australia… probably an English (heritage) thing… from putting the meat through the mincer. In the US it’s ground beef.

      Minced meat is a common term. So many variations happen around the globe. In this case, speaking as sonmeone from canada who writes and edits, ‘mince’ means the mixture based in ground beef.

    Don’t know how I stumbled across this, but made it, and it was EXCELLENT! Thanks for sharing the recipe. Rolling it was harder than I expected, but got it to work.

    Excellent and easy! I didn’t have ham to put in it so I used pastrami and it was very good.

    I made this last night and it was delicious, I substituted red wine for the water worked out great. I am not sure at the cooking temperature, after an hour it was not close and I put the oven temp to 400 degrees.

    I make a variation of this dish myself. It can be grilled, or baked. Either way you will need to use a broiling pan to control run-off. I simply lay raw bacon, slightly overlapped down first, then add the seasoned hamburger meat in a thin layer. Then add motserella cheese, fresh baby spinach, (you can also freeze packaged spinach and crumble it in the package, then shake it over the meat as thick as you desire.)or if you like spicy, try a layer of jalapenos. Then roll it up being sure to seal the ends. I do not use tin foil myself, although I could, how ever, I use parchment paper to make the roll, being careful to insure that where the bacon overlaps is on the bottom of the loaf as it is rolled on to the broiling pan. I pre heat the oven to 375 F. Let loaf cook for 20 min. then coat loaf with brown sugar honey BBQ sauce. Repeat BBQ coating every 15-20 minutes until done. Total cook time is approximately 1 hour +/- depending on oven or grill.

    se ve buenisimo y sencillo ,claro que lo hare a mis hijos les va a encantar no soy muy dada a hacer este tipo de comidas rapidas pero esta me gusto porque la puedes acompañar con ensalada y pan de ajo. gracias

    The only problem is that cooking in a aluminum foil is not healthy at all. Could it be done in another way?

    1 kg de carne magra picada
    3 dientes de ajo picados
    ½ Tbspn de perejil fresco / seco
    2 huevos
    ¾ taza de pan rallado
    Sal y pimienta al gusto
    100 g de jamón
    2 tazas de hojas frescas de espinaca
    2 tazas de queso rallado
    500g de salsa de pasta embotellada
    ½ taza de agua

    Método

    Coloque una hoja grande de papel de aluminio sobre la mesa.
    En un tazón grande, combine picado, ajo, perejil, huevos, pan rallado, sal y pimienta. Mezclar con las manos hasta que estén bien combinadas.
    Agregar la.mezcla en el papel wax h forme un rectángulo grande, aproximadamente 1.5 cm de espesor.
    Agregue el jamón, el queso y la espinaca sobre el rectángulo, dejando 2 cm alrededor del borde sin cobertura.
    Tomando el borde enrolle la carne cuidando que no caiga la espinaca y el queso. Tire hacia atrás la hoja mientras rueda. Selle los extremos del picado para que el relleno no se salga.
    Envuelva el pan entero en papel de aluminio y refrigere hasta que se requiera.
    Cocina

    Precaliente el horno a 180o Coloque el pan (envuelto en papel de aluminio) en un plato grande para hornear.
    Hornear, cubrir durante 1 hora, luego abrir la hoja y verter aprox. ½ de la salsa de pasta sobre el pastel de carne. Añadir ½ taza de agua a la botella de salsa, batir para mezclar con la salsa restante en botella. Verter esto sobre el pan de carne también. Hornear, descubierto durante 15 minutos más

    Minced meat. That’s the term I grew up with…had to indoctrinate myself to American terminologies. Which is To Be expected and okay. Loved the recipe.???. I used “minced” turkey so had to use more bread crumbs to make it firmer..
