MELTED SNOWMAN BISCUITS

It is that time of year and soon we will be bombarded with end of year parties, kindergarten get-togethers, endless parties and family gatherings. Are you always stuck with – “bring a platter or something to share?”

Here is a cute little idea that the kids will go bonkers over. I usually stay away from anything snowman related given we have a hot summer Christmas in Australia but I loved the idea of the melted snowman on cookies. This is not a new idea but I thought I would re-create it for those of you who haven’t seen it before.

I have used a standard biscuit base which I have used before in my Funny Face Biscuit Recipe for Be A Fun Mum but this time I have decreased the amount of sugar since the biscuits are covered in icing sugar. You can use any biscuit base you like including gingerbread, bran & oats or shortbread (homemade or store purchased).

Ingredients:

  • 125g butter, melted
  • 1/3 cup caster sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 2 ½ cups plain flour
  • 1 tsp baking powder
  • 1 cup Icing sugar (for decorating)
  • Marshmallows, mini m&m’s & icing pens (for decorating)

  1. In a large bowl, add melted butter, sugar, eggs & vanilla & whisk until combined.

  1. Stir in flour & baking powder until a soft dough forms. Tip out onto a bench and use your hands to bring it all together. If you are impatient, you can use the dough immediately or alternatively, you can wrap dough in plastic wrap & freeze for 30 mins. This will make the dough firm and a little easier to work with.

  1. Preheat oven to 200oC Line 2 oven trays with baking paper.
  1. Roll out dough onto a floured surface approx ½ cm thick. You want the biscuits to be fairly large since you want to give the illusion of a melted snowman on top. Cut circles using the rim of a glass (approx 9cm diameter). Don’t worry if your biscuits are not exactly perfect as you are going to cover the top of them anyway.

  1. Place on baking trays & bake in preheated oven for 6 – 8 mins or until golden. Remove from oven & allow to cool completely.

DECORATING

  1. Using the icing pen, draw little faces on the marshmallows. I used black pen for the eyes and mouth and pink pen for the noses. You can use one pen for both if you like. For the nose, I slowly squeezed the icing out as I pulled the pen away from the marshmallow to give a 3D effect.

  1. Mix 1 cup icing sugar with 3 tsp water. Stir until smooth. The consistency should be runny but thick enough to spread on the biscuit.   Spread on the biscuit to give a melted effect.

  1. Place the marshmallow face into the icing. Add 3 buttons to each snowman. I used mini m&m’s but you can use whatever you have in the pantry. Set aisde for the icing to set.
  1. Once hard, I then used the black icing pen to draw on the arms. I skipped the snowman scarf as it was an extra step that I didn’t think was necessary and they look great just the way they were. Feel free to add a scarf to your snowmen if you like.

          I would say approximately 20. It depends on how large you make the biscuits.

    Love this idea. I was lost this year as to what I was going to do for my great great nieces at Christmas. I like to give them a goody bag filled with unusual things, I had done a few things for them but just needed something else. Then I saw this. GREAT. So going to make these for them, and I know they will have fun when they open the bags. They get excited in seeing what I have made for them.

    How big is the cup – i.e how much flour and sugar??

      Hi Debbie. You’ll need to use measuring cups. They are labeled 1 cup – 1/2 cup – 1/3 cup etc.

    Where can you get the Icing Sugar? Is it the same as confectionere’s sugar ? I used wilton’s icing very dull..

    Hi, love this! Thought too that you could use pretzel sticks for the arms, 1 whole and another broken in half for both sides. Put on when sugar is still soft.

    I’ve just made them and used some improvisation. Melted chocolate to pipe on marshmallows for eyes, mouth and arms. Tiny slices of orange sweets like skittles for the nose (use a cocktail stick to poke a hole in the marshmallow and then it’s easier to get the sweet into). Smarties for buttons.
    The recipe made 20.
    Oven temp 180 c if a fan oven for 8 mins.
    Takes a while to decorate but lots of fun.
