These banana muffins are super simple to make and freeze well. Great for the lunch box. I did some work for Hellmann’s Mayonnaise and did some recipe testing and this was a hit. It doesn’t taste of mayo either. I made a couple of batches of these and put them in the freezer to pull out of a school morning and place directly in the lunch box. You can find one of the lunch boxes I made for my children further below.
Ingredients
1 cup mayonnaise
3 large ripe bananas
¾ cup sugar (if you have a sweet tooth, you can increased this to 1 cup)
2 cups plain flour
1 & ½ teaspoons of bicarb soda
Method
- Mash up bananas well in a bowl.
- Add all other ingredients and stir to combine.
- Divide batter between approximately 15 muffin cases.
- Cook in a preheated 180°C oven for approximately 25 minutes until golden.
