Super Easy Lunchbox Scrolls, 4 Ways

When it comes to the morning routine, getting packed lunches ready can be challenging and time-consuming. It’s hard to continually come up with new ideas for what to include, and mornings are busy enough without having to try and whip up a range of snacks from scratch. So having some delicious, pre-prepared scrolls that you can pop straight from the freezer into lunchboxes is a lifesaver!

We’ve come up with four super easy scroll recipes to help take the pain out of making lunchbox snacks. They’re really fun for kids to make, and they’re really tasty too! Each recipe has no more than four ingredients, takes just minutes to prepare, and bakes in a quarter of an hour. What’s more, the scrolls can be prepared in advance and kept in the freezer. So you can make a batch in the holidays and use them all term long!   

Pizza Pinwheels

This is our basic Pizza Pinwheels recipe. It’s great just as it is, but you can also add in any of your favourite pizza toppings to make it extra special, such as some chopped ham or pepperoni.


  • 1 sheet frozen puff pastry
  • 2 tbsp tomato paste
  • 1/2 cup grated mozzarella cheese
  • 1 tsp dried oregano

Vegemite Scrolls

The scrolls are a great Aussie classic. Based on pantry staples, you’ll always have the ingredients on hand to make these whenever you run out.


  • 1 sheet frozen puff pastry
  • 2 tsp vegemite
  • 1/2 cup grated cheddar cheese

Pesto Pinwheels

For simple scrolls, these Pesto Pinwheels seem surprisingly sophisticated. Great in lunchboxes, they also make for awesome finger food when entertaining or when you need to bring a plate to a gathering.


  • 1 sheet frozen puff pastry
  • 2 tbsp pesto
  • 1 tbsp crumbled feta cheese
  • 2 tbsp chopped semi-dried or sundried tomatoes

Jammy Swirls

For a sweet twist, why not try these delicious Jammy Swirls? With just two ingredients, these are the easiest snacks to make and kids will love them! We made our version with fig jam, but any favourite jam flavours are sure to be a hit. Just make sure they’re totally cooled before anyone touches or eats them, as when they first come out of the oven, the jam can be extremely hot.


  • 1 sheet frozen puff pastry
  • 1/3 cup jam


  1. Pre-heat the oven to 180°C. Take a sheet of frozen pastry out of the freezer (or more if you want to multiply the recipe to make a batch). No need to defrost the pastry. You can start assembling it straight away, and by the time it comes around to rolling the scroll, the pastry will usually be defrosted.
  2. Spread the paste (tomato paste / pesto / vegemite / jam, depending on recipe) over the pastry sheet.
  3. Add any additional toppings. Make sure you spread them evenly over the sheet and don’t overload the toppings.
  4. Roll the pastry tightly, starting at one end and going all the way to the other.
  5. Cut the roll into pieces. We usually cut into 12 pieces for small, snack-sized scrolls, but you can make them bigger if you wish.
  6. Arrange the swirls on a lined baking tray and bake until the pastry is lightly golden (approx. 15 minutes).
  7. Allow to cool. Then eat or store in an air-tight container. You can place the whole container in the freezer to keep for longer. Then simply take one out whenever you want one. We find that when we put frozen scrolls into lunchboxes in the morning, they’ve defrosted in time for lunch.
