
These muffins have only 4 ingredients and are really easy to make. I sometimes do a heap of mini muffins and freeze them so they are ready to use for the lunch box anytime.
This recipe makes about 20 mini muffins.
Ingredients
- 1 Cup SR Flour
- 1 Cup Desiccated Coconut
- 1/2 Cup Sugar
- 3/4 Cup Milk
Method
1. Gently combine all ingredients in a bowl with a large spoon.
2. Spoon mixture into a cupcase-lined mini muffin pan.
3. Cook for about 15 min in 170°C (325°F) oven until slightly golden. To check if they are cooked, place a clean knife in the middle and if it comes out clean, it is cooked. Below is a quick video of the process.
