When I need a quick bake item to include in the kids lunchboxes, I always make this Mix and Match Slice.

It doesn’t take long to bake and the slice can be tailored to whichever flavour you choose. Hence the name being ‘Mix and Match’ Slice.
You could make it weekly and the kids won’t get bored of it because the flavours can be changed each week when you bake it.
Flavour variations include
- Lemon Slice
- Lime Slice
- Orange Slice
- Chocolate Slice
- Vanilla Slice
The variations can be a fruity or traditional flavoured twist. All you need to do is choose your flavour and tweak the recipe to suit.
Ingredients
For the slice base
- 1 cup of self-raising flour
- 1 cup of desiccated coconut
- 1/2 cup of caster sugar
- 125gms of melted butter
To add flavour
- 2 tablespoons of cocoa for chocolate slice
- Zest of an orange/lime/lemon for a citrus slice
Or you can keep the slice base plain and flavour the icing instead.

For the Lemon/Orange/Lime Icing
- 1.5 cups of icing sugar
- 30gm melted butter
- Zest of your chosen citrus fruit
- 1 table spoon of juice (or more) to get a spreadable consistency
Method for Citrus Icing: Sift the icing sugar into a bowl and add melted butter. Add zest of your chosen fruit and enough juice to create a spreadable icing. If you add too much juice, add more icing sugar.
For Chocolate/Vanilla Icing
- 1.5 cups of icing sugar
- 30gm butter
- 2 tablespoons of cocoa (leave out if making vanilla)
- 1 tablespoon of vanilla essence (leave out if making chocolate)
- 1 tablespoon or less of milk to get a smooth consistency
Method for Chocolate Icing: Sift icing sugar with the cocoa. Add the milk and melted butter and mix until smooth.
Method for Vanilla Icing: Sift icing sugar over melted butter. Add vanilla essence and milk to create a smooth consistency.

I decided to make an orange slice as our orange tree has started to produce delicious fruit.
Method
- Preheat oven to 180 degrees celsius or 160 degrees celsius if fan forced. Line a slice pan with baking paper.
- In a jug, melt the butter. Add the flour, sugar and coconut and mix.
- Press well into the slice pan and place in the oven for 15 minutes or until it starts to go golden.
- Remove from the oven and allow to cool on a rack.
- Spread your flavoured icing on the base. (see above for ingredients and method)
