I had some cauliflower in the fridge that I wanted to use up, so I made some cauliflower popcorn for the lunchbox and my daughter loved it. I used my air-fryer to make these, but it would be easy to put it in a regular oven too.
Ingredients
Spray olive oil
Salt
Cauliflower (I used approx 100 grams)
Method
- Cut cauliflower into florets.
- Spray with olive oil and add a little salt
- Cook in air fryer 180 degrees for approximately 12 minutes (turn once). For a regular oven, cook on 180 degrees Celsius until golden.
For this lunchbox, I did mini scrolls (wrap with salami and lettuce), mini banana muffin (using this banana bread recipe), apple (with a drizzle of lime juice to help minimise browning), mandarin, tomato, and the cauliflower florets.

Just a tip for how I pulled this together of a morning. My daughter had made the muffins a few weeks ago with browning bananas, and put them in the freezer, so the muffins were taken out of the freezer and put directly in the lunch box. I made the cauliflower popcorn of the morning, and they just cook while I go about and do other stuff. The wraps are so quick and easy, I just lay out a wrap, topped with salami and lettuce (many topping combinations work) then rolled it up before cutting into sections. The only trick with this one is you need it to fit snug in the lunchbox so it holds the rolls together. The Yumbox I have is perfect for this. It’s great to have some lunchbox ideas that include veggies too.
